Eons ago, water from the snowy Australian Alps flowed down into the Murray River basin where it collected underground. Brine is extracted from this ancient inland sea and fed into shallow ponds where it evaporates and crystallizes under the hot summer sun. This brine is highly mineralized, giving the resulting salt its delicate peach color.
